Jeff Roskin, Founder/Vice President: Mr. Roskin is a New York native. He graduated from the University of Hartford in 1970 with a degree in Business. After college, he opened an Athletic Uniform Business. He followed that with a Television Newspaper Franchise, and then owned and operated a Baskin Robbins Franchise in West Hartford, CT.  Prior to relocating to Arizona, he was a top real estate agent with the Beazley Company and pursued that vocation after moving to Arizona with Pinnacle Peak Realty.  3 Tomatoes and a Mozzarella restaurant opened shortly thereafter.  He now oversees daily operations of  the restaurant.

Nicole Libman, Director of Operations: Ms. Libman graduated from Clark University in 1999. She is formerly with Pat & Oscars Restaurant chain. At the opening of 3 Tomatoes & Mozzarella, Nicole served as store Manager. In 2003 - 2004 Nicole participated in the opening and training of Wild Noodles and Arizona Bread Company franchises.  She is responsible for producing all training and operating manuals for the new 3 Tomatoes and a Mozzarella.   Her day to day responsibilities include: overseeing new franchisee training, store openings and on-going operational support for the franchise system.
